Interview with Pan U, Marjaro café

 

熙熙攘攘的都市車來人往,喧囂雜沓。有一條小巷卻靜謐獨立,被重重林蔭拱擁而出,潘俞的「馬札羅咖啡館」就在這裡。

 

輕柔爵士音樂、溫暖的木色裝潢伴著陣陣咖啡香,老闆潘俞拿出他的得獎大作──冰滴咖啡,和我們一同分享,告訴我們每支咖啡的特色與故事。

 

 Wandering by the hustle and bustle of the city, there’s a small lane tranquil and quite, the Marjaro coffee shop is located here. Soft jazz music, warm wooden furniture with a sense of coffee, Pan U, the owner of the coffee shop took out his masterpiece--- ice drop coffee. He shared the characteristic of each kind of coffee and the story behind.

 

 

遇見咖啡之前的人生旅程  Life journey before coffee

 

潘俞充滿好奇心和活力,正因為個性緣故,從電子科畢業後並未投入電子產業,反而投身製片圈。曾經身為廣告和電影的後製人員,他喜歡和人打交道,在製片圈能和很多不同的人互動交流,讓他覺得非常好玩,也因而願意投注許多心力。

 

製片一做就近乎十個年頭,潘俞的人生也邁入成立家庭的全新階段。他反問自己,在聲光餘影中的自己,究竟所求何事?回應內心的聲音,他想覓求一個安定、不用老是跑來跑去和熬夜的工作。「製片那是給年輕人玩的啦!」他笑著說。

 

Pan U is full of curiosity and energy, and because of his personality, he indulged himself into film making industry after graduated from electronic department. He used to be the production assistant of advertisement and movies. He liked to make friends with others and meet new friends. Since making films enable him to interact with different people everyday, he found it very interesting and would love to put lots of efforts in this area. He has been producing films more than decades, and his life has turned to another stage---owning a family. He asked himself the purpose of pursuing in images and films. Recalling the voice from the bottom of his heart, he wanted a job that is safe and stable, didn’t need to run over or to stay up overnight.

‘’Production is for those young people!’’ he replied with a hint of smile.

 

在那個關鍵的轉捩點,有位做咖啡批發的朋友,將他引入咖啡世界。從此他走上另一條不同的路。

 

 At the turning point, there’s a friend who was wholesaling coffee and leaded him into the world of coffee. From that on, he went on a totally different way of life.

 

 

 

咖啡是活的  Coffee is full of vigor

 

「咖啡不就是那樣嗎?苦苦黑黑的」。這是大家的普遍印象,也是潘俞一開始的疑問。

 

但親自下海後,才發現咖啡大有學問。咖啡豆種類之多,烘焙深淺都各有神韻;火侯掌控細膩不一,也都會大大影響風味。就像人一樣,性情樣貌各不同,對待咖啡,就像和人打交道一樣,充滿彈性和可能性;太過僵化制式,都會收到反效果。

 

‘’Isn’t coffee like that, bitter and black?’’ This is the general images of coffee for most of the people, and it’s also a question for Pan U. However, not until indulging in this area that he found out there’s knowledge inside. There’s a variety of coffee beans and each kind is different in the way it’s baked. The timing of controlling the fire also influences the flavor greatly. Coffee is like people, each is different in personalities and characteristics. Treating coffee is like interacting with people, it’s full of flexibility and possibility. If it’s too stiff, we’ll get the opposite effect.

 

每當創造出咖啡的最好味道時,潘俞會再嘗試另一支新的咖啡。「不要說顧客會膩,我自己也會膩。」好奇心和學習力都很強的他,已經能掌握四十多種咖啡的調製方法。堅持用最拿手的淺培咖啡,給顧客最多樣最驚艷的感受。

 

咖啡有如心電感應般地,出現在他生命的最關鍵轉捩,回應了他的生涯規劃,以及他勇於嘗試的精神。所以他才敢肯定的說:「咖啡是可以做一輩子的!」但若咖啡太早出現在他的生命中,他也不會選擇煮咖啡。「太剛好了,一切都是緣分,就跟旅行一樣。」

 

Each time he creates the best flavor of one coffee, he will try another one. Not only the customers get weary, we get weary too.’’ With string curiosity and learning capacity, he knows the methods of making more than 40 kinds of coffee. He insists in making low-baked coffee which he’s good at and give the customer a grand new experience. Coffee is like a telepathy, springs up in his turning point, recall with his life plans and the spirit of daring to try. He said firmly that making coffee can be a life-long work. But if coffee showed up too early in his life, he won’t choose to do it.

‘’All is serendipity, as a journey.’’

 

 

我們之間不該有隔閡  No barriers between us

 

眼尖的朋友應該會發現,馬札羅咖啡館的吧台格外的低!這是潘俞巧思設計,為了要讓我們和咖啡師更親近互動。坦承直接的面對彼此,撤下現實的區隔,讓咖啡可以為了純粹的人際互動而存在。

 

 If being perceptive enough, it’s easy to find that the bar is particularly low. It’s a innovative design from Mr.Pan, in order to interact with the coffee maker more closely. Confronting each other candidly and abandon the virtual barriers, coffee   exists for the pure interpersonal relations.

 

有人來到馬札羅咖啡廳,是為了找尋咖啡的美好味道;有人來到這裡,是為了享受恬靜優雅的氛圍;有人偶然途經這裡,就意外成了忠實主顧。這些懷有不同期待、不同經驗的人們在這齊聚,彼此交換著生活遇見的一切,甚至成為深交的朋友。潘俞時常加入他們的話題,他說:「大家很規律,每天固定的時間都會有固定的人來,開始說著自己的故事。」

 

Some people come to the coffee shop for the finest flavor, some for the elegant

atmosphere, some even pass by occasionally and become a loyal customer. These people with different expectation and experience come and gather together, exchange their daily life and develop friendships. Mr.Pan often joins in their topic, ‘’They are regular, each day at a fixed time come stable people, and begin their story here.’’ , he said.

 

在這裡,人們卸下生活的沉重裝甲,輕鬆自適的聊著天,交換彼此的心事,讓馬札羅咖啡館成了另一種「深夜食堂」,彼此的日常大小事在咖啡裡,化成一段又一段旅程,等待來訪的每一個人品嘗。「品嘗咖啡的同時,就像一場旅行。」

 

 In Marjaro café, people unload heavy burden, they can chat leisurely and exchange their thoughts. Marjaro becomes a ‘’midnight canteen’’, daily things just as round trips, waiting for every visitor to have a taste. ‘’When tasting coffee, it’s like travelling.’’
